It really, really, really stinks. And if you haven't noticed, most of the 'easy' home-made recipes out there incorporate lots of cheese, cream, and milk. It's pretty depressing, and even though I've looked everywhere for good lactose-free cookbooks, I have discovered that it's a pretty small market. This confuses me, because according to statistics, there are thousands of lactose-free adults, especially those from Asia and other countries that don't drink milk from the cow very often.
But fortunately, our adult-onset lactose-intolerance has opened some new opportunities and adventures, and has caused us to become ruefully sick of soy milk.
This blog is dedicated to recipes that we have been using to help us manage our lactose-intolerance, and sometimes you will see that we will give in to cheese and yogurts at times and simply deal with the regretfully gassy consequences, since those two foods don't seem to give us too much discomfort. Especially yogurt, it seems to be our best friend. :-)
